1 teaspoon baking soda
2 cups buttermilk
1 egg

Quantities scale automatically with servings. Tap an ingredient to check it off as you go.

Cooking instructions

1

Step 1

Combine both types of flour with baking soda and salt in a large bowl.

2

Step 2

Add the buttermilk and using a wooden spoon mix until you get nice dough.

3

Step 3

Transfer onto a floured surface and form into a loaf (do not knead, the less you work the dough the better). Using both hands make moves like if you wanted to lift the dough, then tuck it under and at the same time turn it in clockwise/anticlockwise direction. Repeat several times. This will shape the dough into a nice round loaf.

4

Step 4

Place the dough onto a baking tray lined with baking paper and mark a cross using a knife (you can also cut it into quarters, if you prefer smaller loaves).

5

Step 5

Brush with egg wash and place in a preheated oven.

6

Step 6

Bake at 200 C/400 F for 30 minutes or until ready (if you knock on the bottom of the bread and you hear a hollow sound you know its ready).

7

Step 7

Let it cool down on a wire rack before serving.

Read it through first

Skim all 7 steps before you start — it is the difference between cooking and firefighting.

Scale it

Use the servings stepper above the ingredients and every quantity adjusts. Cooking times stay roughly the same.

Storage

Cool completely, then keep in an airtight container in the fridge for up to three days.

Reheating

Reheat gently with a splash of water in a covered pan, rather than blasting it, so nothing dries out.
